The “miracle” tomato soup recipe only takes 5 minutes – no chopping

No soup bowl will warm you up and keep you full all afternoon, but homemade can take time.

This quick recipe is perfect for those who want to replace the can of soup hiding in the back of the cupboard with fresh food.

Registered nutritionist and restaurateur Alexis Joseph has shared Hummus on her blog. The formula is claimed to be a “miracle” made in a blender with just five ingredients.

Described as “silky”, the recipe calls for tinned tomatoes instead of fresh to achieve a “creamy” consistency in five minutes.

Alexis added, “This silky smooth, dairy-free tomato soup using canned tomatoes requires no chopping or frying. This recipe couldn’t be easier and it freezes great!”

Five-minute tomato soup recipe

Ingredients

237 m vegetable broth

One can of whole peeled tomatoes

Half a cup of whole cashews

One clove of garlic

3/4 teaspoon fine sea salt

Method

Peel the garlic first, then place in a microwave-safe measuring cup or bowl with the cashews.

Microwave for a minute on full power, or if you don’t have a microwave, heat in a small pan on the stove over medium heat.

Now add the canned tomatoes and their juices to the blender jug, along with the stock, heated garlic and cashew nuts. Season with salt and pepper, if desired, then heat on high.

Mix the mixture until it is very smooth and creamy, give it a taste and adjust the spices if necessary. Chili flakes or dried herbs like basil or oregano are a great flavor addition.

Alexis said, “If your brand of tomatoes is more acidic, you can add one teaspoon of sugar to balance it out.”

Once the mixture is well seasoned, transfer it to a saucepan over medium heat and stir gently until fully heated. Pour into bowls and serve with crusty bread garnished with basil.
