As the weather turns colder, many people are looking for something comforting yet healthy to do during the week to perk up after a long day.
Mary Berry’s ‘one pot wonder’ salmon dinner is absolutely delicious and great to make for a weeknight dinner as it only takes 20 minutes to make from scratch.
In her cookbook, Simple Comforts, Mary wrote: “So easy to make, yet impressive, this is a really healthy meal for the family.
“If you’re not keen on fennel, you can use thinly sliced medium leeks instead, and pink trout can also be substituted for the salmon.”
This is the perfect recipe for anyone who wants to make something quick but homemade, and everything is cooked in one pan, so you can save time on washing up.
Method
Melt the butter in a saucepan over low heat. Slice the shallot and fennel, put them in a pan and cook on high heat for two to three minutes.
When the time is up, lower the heat, cover the pan with a lid and continue cooking for 8-10 minutes until cooked through.
Pour the wine into the pot and boil until the liquid has reduced by half, then stir in the creme fraiche and bring to the boil. Season the mixture with salt and pepper.
Cut each salmon fillet in half lengthwise to make eight thin strips. Place the salmon strips in a single layer in the sauce.
Cover the pan and let it simmer for four minutes until the salmon is almost cooked.
Add the peas, tuck them under the sauce and cook for another three minutes. Mix in lemon juice, sprinkle with parsley and your salmon casserole is ready to serve.
This dish is best eaten with either rice, mashed potatoes or a good piece of crusty bread.
