With the bank holiday coming up, it’s safe to assume that brunch is in order for many Brits looking to make the most of the long weekend.
If you’re hosting at home instead of going out, here’s a delicious and quick breakfast recipe that every guest will love.
Jamie Oliver’s Fluffy Flourless Pancakes take just 10 minutes to make and the chef rates them as ‘not too tricky’.
When made as directed, this recipe makes two servings, so feel free to modify accordingly.
Sharing the recipe on her official website, the chef said: “These simple breakfast pancakes can be made without flour – throw the ingredients in a blender, whip it up and have a pan-fried breakfast in no time. Easy!”
Ingredients
100 g of porridge oats
100 g of cottage cheese
Two large free-range eggs
One teaspoon of baking powder
olive oil or unsalted butter, for frying
Filling options:
One avocado
Two free range eggs
chili sauce
Instructions
Mix oats, cottage cheese, two eggs and baking powder in a blender. Mix until smooth, add a pinch of sea salt and a splash of water if the mixture is too thick.
Heat a large non-stick frying pan over medium heat with a little oil or butter.
Pour a spoonful of batter into the pan, cook in batches if necessary. Fry on both sides for about two minutes or until golden brown.
If desired, serve the pancakes with sliced avocado, fried egg and chili sauce, or customize with your favorite toppings.
