“Any exposure to heat, direct sunlight or moisture will cause them to germinate and eventually spoil.
“Your potatoes may even turn green in the light because photosynthesis can trigger the production of chlorophyll and even solanine, a toxin that can be harmful if consumed in large amounts.”
While some of us keep potatoes in the fridge, Hutt recommended against it.
He continued: “While there is some debate about whether potatoes should be in the fridge, this is often too cold for them and can convert potato starch into sugars, leading to discolouration.
“The best place for a potato is the pantry, preferably in a mesh or hessian bag that allows air to enter (definitely not in a sealed plastic container), and away from other products.
“Onions are particularly nasty pantry partners for potatoes – the ethylene gas released by onions causes them to spoil prematurely, while the moisture in the potato can make them gooey. Keep them separate to ensure a long shelf life for both.”
