How to make an all-in-one carrot cake recipe quickly with only 4 ingredients

Making cake recipes can often require a lot of effort, especially when it comes to carrot cakes.

However, with the right recipe, carrot cake can be so straightforward and takes no time at all.

Many recipes require a long list of ingredients and complicated methods to achieve the perfect consistency, but swapping out the egg and butter for one ingredient can make for a much simpler pastry.

The recipe, which has taken social media by storm, uses condensed milk to break down the cake into four main ingredients.

First shared on a Facebook budgeting page, the recipe is “quick and easy” and “a great way to use up carrots in the fridge,” says the Practical Parenting blogger.

Sweetened milk works as a perfect egg substitute and means less sugar is needed to balance the sponge itself.

Ingredients

Two cups of self-rising flour (240g)

Two cups of grated carrot (245g)

One can of condensed milk

100 g pecans, walnuts or sultanas

Cream cheese frosting (optional)

60 g of soft butter

500 g powdered sugar (sieved)

250 g of cream cheese

80 ml of lemon juice

Method

Making the cake is easy, all you need is a standard sized loaf pan and a large mixing bowl.

Start by preheating the oven to 180 degrees, grease and line a loaf pan with baking paper to cover the bottom and sides.

Grate the carrots and put them in a clean kitchen towel, turn over and gently squeeze out the excess moisture.

Weigh the flour and condensed milk, then add both to the mixing bowl with the carrots.

Mix everything into a cake batter, then mix in the nuts or sultanas. A mixture of the two works well, measure 50g each.

Mix them into the mixture and then pour everything into the lined loaf pan. Bake at 180 degrees for 45 minutes until skewers come out clean.

After baking, take the pan out of the oven and let the cake cool. If you are making cream cheese frosting, go to the next step.

Using an electric mixer, beat the cream cheese until smooth, then add the softened butter and beat for 30 seconds to a minute until well combined.

Add the lemon juice and powdered sugar and continue mixing until everything is combined. When the cake is completely cooled, spread the frosting on top.
