300 g of tagliatelle
20 g unsalted butter
Six cloves of garlic, chopped
Two tablespoons of plain flour
150 ml of chicken broth
200 ml of double cream
85 g grated parmesan
20 g coarsely chopped parsley
Instructions
Start by cooking the pasta according to the instructions on the package. While it cooks, melt the butter in your largest frying pan. When the butter foams, add minced garlic and about 25 twists of freshly ground black pepper. Sauté for 4-5 minutes until the garlic turns light golden and fragrant.
Next, add the flour to the pan to form a paste. Stir for 1-2 minutes, then gradually whisk in the chicken stock until smooth. Pour in the cream and add most of the Parmesan cheese. Stir until everything is melted and well combined, then season to taste.
Transfer the cooked pasta directly to the sauce together with a splash of the reserved cooking water. Mix thoroughly, adding a little pasta water if necessary, until you get a thick and shiny sauce.
