Salmon doesn’t need to be air-fried, deep-fried or crumb-coated to taste delicious, often it just needs a little glaze to bring out the best of its flavor.
The combination of teriyaki and juicy pink salmon fillet is hard to beat when done right and surprisingly easy to master at home.
Chef, restaurateur and cookbook author Mike Robinson has the perfect recipe for anyone looking for a quick meal.
Sharing her formula on Saturday Kitchen, she described the dish as “perfect for a quick weeknight dinner”, which is on the table in “five simple steps”.
Made with a blend of fragrant ginger, spicy chili and coriander leaves, the herbs and spices combine with the umami soy sauce to create an Asian-inspired dish bursting with flavor.
Teriyaki salmon recipe
Ingredients
Two salmon fillets
Four to five tablespoons of dark soy sauce
One lime, zest and juice
One small chili
Two tablespoons of maple syrup
One large garlic clove, finely chopped
One piece of ginger, finely chopped
One sheet of egg noodles
A bunch of chopped cilantro
One tablespoon of sesame oil
Extra lime juice
Method
First, prepare all the ingredients for quick cooking to assemble a delicious glazed salmon.
Start by testing the lime with a small plate, then squeeze the juice into a small cup or ramekin – remove the seeds. Peel and mince the garlic and mince the ginger and chili in the same way.
Now heat oil in a pan and fry the ginger, garlic and chili until fragrant, but avoid coloring too much. Now add the lime zest and juice and soy sauce.
Dark soy is less salty than light versions, but if you only have light, use half the amount.
Add the maple syrup (or honey if you don’t have maple) and cook for a minute or until reduced and sticky.
Meanwhile, fry two pieces of salmon in a hot pan for two minutes on both sides. When the sauce has reduced, add the salmon to the teriyaki sauce pan.
Boil and drain the noodles, adding sesame oil, spices, chopped coriander and a squeeze of lime.
Serve the sticky teriyaki salmon on a bed of noodles with chopped cilantro for added flavor.
