This pasta dish is secretly full of vegetables, so picky eaters are unlikely to notice that they are eating healthy food.
Treating fussy eaters like toddlers seems to work, according to YouTube’s My Fussy Eater, who has found a way to sneak cauliflower into pasta.
She said: “If you’re struggling to get your kids veggies, you’re going to love today’s recipe. It’s a healthy twist on an old family favorite – it’s ‘Hidden Cauliflower Mac ‘n’ Cheese.’
“This recipe is perfect for the pickiest eater—you can’t taste the cauliflower, you can’t see it, you can’t smell it—it’s mixed into the cheese sauce and no one will know it’s even there.”
She explained that all you need for this recipe is dried pasta, cauliflower, vegetable stock cube, milk, shredded cheddar cheese, butter, dijon mustard, panko breadcrumbs, and cherry tomatoes.
First she cooked the macaroni in a pan, and Ciara put the pasta away as she started to chop the cauliflower and put it in her own pan. A vegetable bouillon cube was added to the cauliflower before it was covered with boiling water and cooked “for about five minutes until the cauliflower is completely tender.
When the cauliflower was done, Ciara drained it and added it to the blender along with the milk, grated cheese, dijon mustard and butter. This should become a “lovely sauce”.
If the sauce is too thick, Ciara says, you can “add extra milk, and if you want, you can add salt and pepper at this point.”
After the pasta is drained, the sauce is added and mixed. Then it is transferred to a large dish or several small dishes, to which additional cheese and breadcrumbs and a whole tomato are added. Then cook in the oven for 15 minutes and you’re done!
